I defrosted some grass fed for dinner.
I am now suddenly at a loss.....I don't want to make spaghetti and I don't have the stuff for tacos (or anything like them). I was thinking maybe a goulash thing? Any other ideas? I was thinking something soupy or casserole like (easy one dish kind of thing).

I like to brown ground beef with onion and garlic, and sometimes mushrooms. Then I add red wine, flour, and chicken/beef broth. I play around with the quantities until I have a consistency I like. I serve it over mashed potatoes.

My fav is the Sombrero Dip that I put in the recipe box a while back. You eat it with tortilla chips and it's awesome!

Beef Bake!
cook the beef, crumbled, drained
put in a 3-qt casserole with cream of mushroom + a little milk, veggies, and your choice of seasonings. I usually do salt, pepper, italian seasoning mix.
top with biscuit topping. Bisquick has a recipe, or I just make the "betty crocker" biscuit recipe with double the milk.
put in the oven and bake at (350?) for 30 minutes, viola!

Meatloaf
...
If you don't want to run the oven, You can microwave the meatloaf if you make 4-6 mini loaves instead of one big one. Put in a microwave safe dish for about 15 minutes, covered. Rotate every 5 min if you don't have a turntable in there.

That sounds so good. I wish I had seen that before I started cooking.
I used Leigh's recipe....the biscuits sounded good. I used the buttermilk biscuit recipe from Betty crocker, and added peas and corn for the veggies.

I'm always looking for a new meatloaf recipe to try ( I had the BEST one but lost it before I moved and have been looking for something similar to it).
How long do you cook it, at what temp?

yum meat loaf sounds so good. My mom makes a yummy one with oats and BBQ sauce.
Ground beef with onions seasoned with cajon spice and garlic salt is my fav. You can make burritos or tacos or use that as a base for a sauce and just add noodles :)
