Here's what you will need:
13 3/4 oz fat-free chicken or vegetable broth
1 large onion, diced
2 carrots, diced
1/2 tsp baking soda
1 tsp cinnamon
1/3 tsp salt
1/8 tsp pepper
16 oz canned pumpkin
2 c evaporated fat-free milk
1/4 c low-fat sour cream
4 tsp bacon bits (optional)
In an large pot, combine the broth, onions, carrots, baking soda, cinnamon, salt and pepper, and simmer uncovered for 10 to 15 minutes, until the carrots are soft. Put the vegetables and broth into a blender or food processer and blend until smooth. Add the canned pumpkin and evaporated milk, and simmer uncovered for 10 minutes. Serve topped with sour cream and bacon bits, if desired.
Note: The first time my hubby made this, it was strong with onion. The next time, he used less onion, which made it taste better. This does make kind of a big batch. For a 2 person meal, it makes enough to take leftovers to work and serve to them.
