I am in a dinner rut and am looking for new ideas. What are you having for dinner tonight???

I hate dinner ruts. When that happens to me, I always do some sort of Mexican since that's our favorite. Taco salads, tacos, burritos, enchilada casserole...they are all quick and easy!

I was just sitting here, thinking the same thing. I wanted to make some mini quiches, to use up some ham but I never made it to the store today. So I'm thinking going out for dinner sounds good!

US TOO!!!

I think tonight we will have chicken. Not sure how I will be making it yet though. I just know that it is in the fridge and it needs to be cooked soon.

I will probably bake it with some potatoes and carrots or I will do a simple pan fry....withonly a little oil so it is healthier, and serve it with some veggies.

WE had burritos last night....so I think we will wait another night for mexican.

I hate dinner funks too!

So far this week we've had... nachos, chicken enchiladas verdes, steak burritos, pizza, and breakfast (french toast, potatoes, sausage, eggs).

The chicken was too old...I had to throw it out. I couldnt remeber when my mom bought it when she was up....It was too long ago and the date was like a week ago...oh well....

Now we dont know what we are doing for dinner. I think I will be looking on here for ideas now too. :)

I am grilling (as I type) chicken breasts for some sammys. Can you smell them? I am putting ortega chilis and pepper jack on them. YUMMM

Chicken marsala... bok choy... and some salad.... Ice cream (bon bons we're gunna try) for dessert..

BBQ'd teriyaki chicken, asparagus and white rice w/ teriyaki sauce. JM Rosens cheescake for dessert.

CHICKEN
Marinate your chicken in OJ, Apple Juice, Italian Dressing or a combination of OJ and Italian Dressing. Then add your own spices. I add Lawry's Season Salt, Pepper, Garlic Salt, Italian Seasoning. Then cook.

PASTA
Cook your kid's or Hubby's favorite pasta. Add extra virgin olive oil to coat the pasta, not drench it. Then add crumbled Feta Cheese, Parmesan, Italian Seasoning, Salt and Pepper.

SIDE DISH
Chop New Potatoes (Red Potatoes). Add extra virgin olive oil to frying pan. Add Italian Seasoning, Lawry's Season Salt, Garlic Powder, and Peper. Cover and cook on Med Low to Low.

Boil frozen corn. Drain. Add butter or butter substitue and local honey. Honey is a great way to combat colds, and allergies especially if it is harvested from local plants, and not processed.

SALAD
Chop Romaine Lettuce or Baby Spinach or both. Add diced tomatoes, diced carrots, avocado, and raisins. Add extra virgin olive oil to coat the salad, not drench. Salt and pepper to taste. Crutons optional.

DESSERTS
Put frozen strawberries in a saucepan. Add sugar to coat them, and sprinkle a spoonful of flour to thicken. Pour over Ice Cream, Waffles, or even Brownies.

Dip fresh strawberries in sweet and condensed milk, or a mixture of sweet and condensed milk and a small container of cool whip. Yummmmmm!

SMOOTHIES
Put a handful of baby carrots in a blender. Add milk or soy milk. Blend. You can also add flax seeds or flax oil. This can add omega 3, 6, and 9's which are very beneficial. Only add a teaspoonful. Add a tablespoon of honey for sweetener. Then add fresh and/or frozen fruits of your choice. If you do not use frozen fruits you can add ice to give it a cooler smoothie consistency.

My hubby takes sloppy joes and adds pineapple and bbq sauce to the mix.

LOL! It is the mini cheescakes they sell at Costco. I didn't go and buy them directly from JM Rosens. They were still good though!!! Yum!!

THey are in the freezer sections. 2 lemon, 2 regular and 2 blueberry for $10. Im going to gain 10lbs b/c there are still 3 left!! Unless Dustin gets to them first :tongue

Have you had that one they sell in the restaurant that is cheesecake with the chocoate cake and fudge or mousse center?? I can't remember the name of it, but damn, you can't even eat one piece in one sitting it is so rich!

My problem is that nothing is too rich for me, hence weight loss and health are not optimal. I used to make fudge every Holiday. I remember taking it to work by the pound and most of the employees would eat one maybe two pieces then they were done. I could finish of a pound in a day or two if the craving hit me. I was skinny back then.

I keep telling my husband that I am going to miss sweets when I become a diabetic. What's a girl to do?

Just thought I'd share an idea or two for you...

Let's see...
Last night I made pancakes, scrambled eggs, and turkey bacon for dinner....nice to have a backwards meal every now and then!

Some of our usual meals are...
Spaghetti, with french bread

penne pasta bake...super easy....and really good and filling :)
we eat that with salad....in my salad I put...butter lettuce and spinach, brocolli, carrots, snap peas, corn, a sprinkle of cheese, green onion, and croutons...with dressing

I'm drawing a blank on our other faves...
I know that usually on Saturday *I know it would be boring to most to have it so often but we love this meal* we have filet mignon with baby red potatoes and salad....one of our house 'specialites' and we even make a plate for the dog! * a teeeency tiny one for him * minus the salad of course!
