I have 3 boneless skinless chicken breasts defrosting. What should I do with them?? I usually make casserole type dishes or chicken picata. What are some other ideas???

i made quesidillas the other night with chicken, cheese and bell pepperis, i was really good! that way you could make the kids plain cheese one and make the "adult" ones for you.....maybe with a margarita too!hehe

Mmmm I love chicken, it's so versatile! One of my favs is to bbq the chicken sprinkled with salt, pepper and garlic powder. Then take some good bread (my fav is Chiabata), put butter and garlic powder on it and grill it also. Cover the grilled chicken with provolone cheese and put it on the bread. I like to add lettuce and tomato to the sandwich. It is SOOO GOOD!

We just had this last night....it's very quick and Faith loves it.

Salsa Chicken
Seasoning chicken strips with Taco Seasoning Mix is a great way to
spice up dinner. Sweet and spicy Salsa Chicken is delicious served
with rice and black beans.
Prep Time: 5 minutes
Cook Time: 20 minutes
Makes 4 servings.
Ingredients:
1 package (1.25 ounces) McCormick(r) Taco Seasoning
1 pound boneless skinless chicken breast halves, cut in strips
2 tablespoons oil
1 can (14 1/2 ounces) no salt added diced tomatoes
1/3 cup apricot or peach preserves

Directions:
1. Empty seasoning mix onto plate or into plastic bag. Add chicken
strips; toss to coat.

2. Heat oil in large skillet on medium heat. Add chicken; cook and
stir 5 minutes or until chicken is cooked through.

3. Stir in tomatoes and preserves. Cover and simmer 10 minutes.

Stuffed Chicken Breast

I figured that someone needed to post in here so we can get it started up again. I love to cook, and I love to try new things.

Stuffed Chicken Breasts (Serves 4)
Preheat Oven to 350 Degrees

*2 Huge boneless, skinless chicken breasts
*1/4 C. Ricotta Cheese
*1/4 C. Romano Cheese Or Parm. Cheese ( Plus a little extra for the top when plated)
* 1 Egg
* 2 Tbs. lemon juice
* 2-4 cloves of garlic (Chopped)
* 1/2 C. or so of dry white wine
* 1 C. Sliced Mushrooms
* 2 C. Spinach (Uncooked)
* Olive Oil
* Salt and Pepper to taste
* Parsley to taste(optional)
*Toothpicks

Thaw and pound until flat and about 1/4 inch thick both chicken breasts. Set aside.

In a skillet saute together until tender:
Olive Oil
Garlic
Mushrooms
Spinach
1 Tbs. Lemon Juice
White wine can be added at the beginning or near the end depending on the level of flavor you want.

While the veggies saute, mix together:
All cheeses
Egg
1 Tbs. Lemon Juice
Parsley

Carefully place half of the cheese and half of the veggie mixture onto each breast. NOTE: I ended up with a little extra of each, so fill to desired level. Fold up the sides and ends so that the filling is contained. Hold together with toothpicks.
Place in an oiled baking dish and lightly pat top with oil and salt and pepper top taste. Bake for approx. 35-40 minutes or until cooked though. Times seem to vary depending on the oven...
Let set for a good 10 minutes before removing toothpicks and cutting in half.

Serve over rice or quinoa.

If desired a quick white sauce can be made with some lemon juice, wine, garlic powder, flour and small amount of milk....sorry I do not know the quantities because I have never measured for this sauce. Pour over chicken and serve.

My friend gave me this recipe and every time I make it everyone LOVES it. she calls it Viva La Chicken
4 chicken Breast
2 cups grated cheese
1 package corn tortillas (12) rip them into bite sized pieces
1 small jar of salsa
1 small can of green chilies
1 small can of sliced olives
1 can of cream of chicken soup
Cut up chicken into bite sized pieces and cook on stove for a few minutes (about 5)
Mix together all the ingredients in a bowl and put in a casserole dish
Cook at 350 for about 40 minutes
I ususally stop about 35 minutes and stir it and add a little more cheese on top
serve alone or with Avocado and Sour Cream.
Drink a Margarita or Corona with it! Yummy!

I was just gonna say that I love chicken, but my fave chicken is good ol' fashioned BBQ chicken... mmm-mmmmm..... plus, with the breasts, I love the leftovers sliced in half or 1/4's heated in the micro or oven to melt some cheese on top, then tossed on some mayo'd bread... mmmmm...lol

You can pour Italian dressing over them and cook them in the oven. Marinating them would be even better.

Marinate it in Lemon and other seasonings. Cook in oven.

You could cook them by pouring BBQ sauce over them and either BBQing them or cooking them in the oven.

You could cook them by dicing them up, adding vegetables such as peas, carrots, corn, diced potatoes and cream of celery soup. Add ingredients to a pie crust. Cook in oven, and you will have your own pot pie. You could even use the recipe on the Pancake mix box (Don't remeber which one). I believe you put all the ingredients into a casserole dish and add the batter on top for a different version of pot pie.

You can cut it into strips, marinate it and cook it with bell peppers for home made fajitas. You can even find those flavor packets for fajitas at the store, if that is your thing. You can serve them with sour cream and guacamole.

You can grill it for sandwitches, or to cut into strips and add to a pasta with Alfredo Sauce. Mmmmmm!

Now I am hungry
