I am sitting here in my just barely starting to cool off apartment after 90 degree weather and wondering what in the world I am going to do about cooking if it's going to be this hot all summer long. That said, anyone have any good salad recipes (this could include any type of salad from fruit, green, pasta, rice, veggie, etc.) I'd love to hear your ideas. Also if anyone has anything with an East Indian flair my husband would probably be delighted to try it as he is from India and tends to miss the flavors.

Barefoot Contessa has a curried cous cous salad recipe that would be good for you to try. Not really East Indian but a taste of it. Plus because it's cous cous you only have to boil water. My kids like the salad too. Search Foodtv.com for the recipe.

My husband loves Mediterranean food. He likes salad with tomatoes, romaine lettuce, cucumbers, feta cheese olive oil.

I myself love smoothies when it is hot. I made a yummy one yesterday. 1 cup of Carrots, 1 Tablespoon Flax Seeds, a Mango, 2 Bananas, 2 cups of Frozen Strawberries, Soy Milk until desired consistency.

Hmmmm...when it is hot we do salads like taco, fruit, broccoli, or chef salads because stuff like potato or pasta salads have to be made in the AM before it gets too hot and I always forget anyways. Otherwise we grilled a lot outside, or got sandwhiches at the deli, or just had a scrounge night where we stuck to the microwave or something. Sometimes it just gets too hot to even want to eat. Sorry no curry recipes from me, I had it once while prego and just can't handle it anymore.

Cucumber salad

I dont remember the exact measurements but I usually slice 2-3 cucumbers really thin. Put in a tupperware bowl with about 1/4 cup red wine vinegar and about a tablespoon of sugar (maybe a little less). I like to add a little bit of water to cut down the strength of the vinegar. I put in the fridge for a couple of hours and its yummy!

Mmmm....we like to take the lemon cucumbers and tomatoes right from our garden, slice them up and mix in with some fresh mozzarella and Paul Newman's oil and vinegar salad dressing :)

mmm, I LOVE cucumbers w/vinagar.... also, fresh whole tomatoes with some salt sprinkled on em....mmmmm... we also do a lot of sandwiches

we decided to take the cooking outside last night and BBQed some chicken and corn! We ate outside too! I love BBQ on hot days! I LOVE SUMMER!!!

Sometimes we eat ice cream for dinner when its totally hot too... add some bananas, strawberries, nuts, etc. to low fat ice cream and you have a generally healthy ice cream dinner with fruits, protein, calcium, etc. :)

I tried to make smoothies last night in DH Vitamix but i think it turned into ice cream LOL I added one bag of frozen berries, 1 cup plain yogart, a bit of sugar and about 2 cups ice. It was so yummy. That was our dinner :)

yeah we just made frozen juice in the vitamix. About 24 ounces worth of ice the concentrate and the rest of the water to get to 36 ounces of water needed.

we are still learning how to use that thing (fancy blender LOL) so we never really know if we are going to get smoothies or ice cream. either way its good and its nice and cool in all this heat.

LOL no we didn't but that is funny. Victor actually bought himself one for Christmas. One of his co-workers swears by it so he had to get one for himself. And ya they are pricey. You can get a pretty good deal when they have them at Costco. I was just there last weekend and they had them in stock at the Santa Rosa store. I will admit it, even though they are expensive they are worth every penny. I can't wait to make baby food :)

that was a splurge we got years ago, before we was po'. It makes "everything" though, ice cream, soup, more stuff, the heat erased my memory :lol. We could easily use it daily to make "smoothies". Our has likely more than paid for itself. We just toss is stuff and it makes whole juices to varying degrees of coldness/thickness. We don't worry about if it is a "smoothie", "juice" or ice cream/sorbet, as long as it is yummy :) Just toss whatever you have laying around that is a fruit/veggie in and you are good to go. Add yogurt/protein powder/flax seed/spirulina/emergen c etc. for extra fun.

and if you can actually cook the dry mix container is invaluable for making your own flours from bulk grains.

i made straeberry smootheis the other day and added hersheys chocolate syrup to make it better!! hehe it was pretty good i might patnent that one......hehe

These smoothies sound so good. I love them, but hate making them and cleaning up. One of my favorite salads is the pea salad--the one with the cheese in it. Most of the time I have cereal when it's really hot.
