I may have posted about this website before (did I? my memory is not so fab...) but, I really love love LOVE http://www.fatfreevegan.com/ No, really! I'm not even a vegan...or a vegetarian (though I do limit my meat as much as I am willing), the food is just really delicious. It's a great way to get healthy side dishes for your food, or deserts, or even entrees if you feel like going vegan for a meal (or you can edit the recipes and make them non vegan).
My favorite part about the recipes on the site is that they are truly healthy, whole foods. Unlike other similar website like vegweb where the only requirement is that they are vegetarian, or cooking light, where they just take gourmet recipes and make them slightly less calories, 90% of these recipes actually *are* healthy to begin with. My only complaint is that some of the recipes are involved -novice cooks be warned. She also has a tendency to use hard-to-find or expensive ingredients -but I just substitute something similar or skip such an ingredient all together. I've yet to make one of her recipes that didn't come out.
