Okay so Lindsay and Jackie have me hungry now...
What is everyone having for dinner....We already know that Jackie is on the hunt for some good breadsticks....what else is everyone having???
I just made Green Enchiladas. They have shreaded chicken, spinach, sour cream, chilis & jack cheese. They are sooooooo good, but take a while (and a mess) to cook!!

Mmm, that sounds good. I took chicken thighs out of the freezer this AM but I haven't decided what to do with them yet. Any ideas?

OMG that sounds good. Do you use green enchilada sauce or chili verde? I think I will have to make these.
The other day I made BBQ sauce (or you can use regular stuff) and put them in a baking dish, covered with BBQ sauce and baked for about 30-45min. Pretty yummy.

nope, the sauce is made of sour cream, milk, spinach, onions, a little spinach cooking water, cumin & S&P. I'll post the recipe in a sec, it's an old martha stewart recipe.

Hey, something I'm definitely capable of! There's a running joke around here about what a terrible cook I am. Billy threw his back out today at work so he's stuck with me making dinner. :(

Enchilladas or tacos (you'd have to cook and shred the meat first for both of these though).
Umm you could coat them with flour, salt, and pepper and shallow fry them in a pan and then cook up some veggies to go with it.
Baked chiken with a pasta sauce (your choice) served over penne pasta.
BBQ
ugh, I got vetoed on going out to dinner :giggle I'd eat out at a restaurant for every meal if i could (and sometimes we have :bag)
He's making chicken and fries instead

yeah, but he makes dinner every night and cleans up every night. I don't cook. I've made dinner about 3 times in 5 years

Don't get me wrong, I LOVE to cook (hate to clean up however), but if dh was willing to do both...heck....I wouldn't complain!
i dunno how i got so lucky. I also haven't done dishes in 5 years ;)

Salina told me about your unfortunate allergy :D
:lol Yup when we moved in together he had bought the Ivory brand dishsoap and it make my hands break out. I made a comment about how I was allergic to "THE dish soap"
He took that to mean I was allergic to all dish soap, and i have never felt it was necessary to correct him :giggle

We had turkey meatloaf, mashed potatoes, salad and the kids had brocoli.
The only thing I like with chicken thighs is to bbq them. My dh is a mean bbqer. Those enchiladas sound really good!

We have a system in our house....
DH cooks dinner/cleans the kitchen M,T,W

That's a cool system, Brooke! At our house it depends on what we're eating. If it's something I can cook, I do. (Since I only have a handful of dishes that are worth eating LOL) And DH cleans. Most of the time, especially during the summer BBQ months, DH does the cooking and I clean.

Ours is similar to brooke's but it depends on who's working that day. Sun-Wed I cook and Thurs-Sat. he cooks. Cleaning the kitchen depends on who's bath night it is (we alternate bath and bed nights). We both clean the rest of the house on our days off.

humph... I'm ALWAYS the one to cook. I even do the BBQ. The rule when we first got together was that if I cook then he cleans...but now we both share that.
If I ask Scott to make dinner he calls in pizza or chineese. Okay, well he'll do bean barritos if he has to and once he even made stuffed manicotti for my birthday (only once).

I cook all week and Greg does Sat/Sun. When we met he LOVED cooking he still enjoys it but can't seem to handle doing it after work. I myself can't stand it but I do it anyway. Tues/Thurs he works his 2nd job so I usually do something easy/frozen those nights to give myself a break!
