Anyone have a bran muffin recipe that they like to make?....i'm looking for one that actually tastes good.

My mom use to make one that was GREAT I can email her and ask if she remembers. Its been YEARS though.

well....from the sounds of her email I was either not a picky eater or I just don't remember what they actually tasted like....heheheheh here is my mom's email:




I made oat bran muffins - and the recipe is easy, but the muffins aren't that great, although they are good for you, and oat bran has the highest level of water soluble fiber. The recipes I used came in the book for lower your cholesterol, so that's why it does not call for whole eggs:



2 1/4 c. oat-bran (Quaker sells a box of it, down here, I can buy it in bulk...)

1/4 c. chopped nuts (opt)

1/4 c. raisins or dates or whatever (opt)

1 TABLEspoon baking POWDER

1/4 c. BROWN sugar (or honey or molasses)

2 egg whites or egg substitute for 2 eggs

2 TABLEspoons oil



Oven @ 425 degrees. In large bowl combine bran, nuts, raisins and baking powder, brown sugar. Set aside. In small bowl, mix milk, egg whites & oil. Blend wet ingredients into dry ingredients.

Fill baking cups (lined). Bake 15-17 mins.



OIL FREE RECIPE

Same as above, only substitute 2 TABLEspoons CORN SYRUP for the oil, and increase the raisins to 1/2 cup. Then bake SHORTER time, approx. 13 mins.

you could try it and see what you think of it.....my mom is NOT a healthy eater.....so that could be why she said they aren't that great....so keep that in mind.
