I know I have posted this before but I need to do it again. Since I have been sick the last few months I haven't cooked much. I need to get back in the swing of things but our normal meals just don't sound appealing. What are some of your regular staple meals?

We usually have chicken (puke) or pork with some kind of rice and veggie. Turkey tacos have been common around here lately
Pasta (baked ziti, egg noodles, etc)
Baked potatoes or roasted potatoes

Everything else has been fend for yourself b/c I just couldnt look at food.

Any new ideas that aren't too complicated? Most of our meals are after work and I don't have the energy to follow an elaborate recipe.

Hmmm....how about the crock pot? Throw all the stuff for stew, chili, soup, pot roast, etc before work and you come home to dinner and a house that smells great :)

Dustin won't allow me to buy a crockpot. He says we don't have enough room to store it. We do, I don't know what he has against them. I might just go buy one anyway :tongue

our quick and easy staples are burritos (usually just bean & cheese), spaghetti, fettichini w/broccoli (or any mix of veggies) with pesto, steak and potatoes, & lasagna (using the noodles that don't need to be pre-boiled).

We do a lot of the pasta too. I also make turkey enchiladas, which is pretty quick and painless when using the canned enchilada sauce. I usually make some sort of casserole (tuna casserole, turkey tetrazini, enchilada pie, etc) type dish that will last us through Thursday, and then we usually do carryout for the weekend.

Chilli - I make chilli when I need something easy, with or without meat. Saute onions & hamburger, throw in the beans - liquid and all - add chilli powder and cook for a bit, all done! Trader Joe's has boxed cornbread mix that is way easy too and so tasty with it!

What always gets me out of my cooking rut is Cooking Light magazine, I always get inspired by something and I end up cooking a lot of the dishes - easy and tasty!

P.S. Crockpots rock! One pork shoulder+jar of Pace Picante sauce or BBQ sauce and you have tacos or pulled pork sandwiches with no work involved.

I do a lot of one dish meals because it is so easy. John's favorite is hamburger pie and I really like swiss chicken bake. I love the crock pot too so easy.

Lorna - I usually get all my stuff ready the night before, put it in the crock and leave it in the fridge and then whomever is the last to leave in the morning, puts the crock in the pot and turns it on.

We seem to have steak and potatoes and salad once a week...
spaghetti with meat sauce, french bread and salad...
home made pizza...
breakfast for dinner....pancakes, eggs and occasionally bacon or sausage
hmmm...
some other staples around here......
hmmmm....

oh yeah...we make an avacado, cheese, green onion, bacon, and salsa omellette about twice a month...dh likes it a lot...

tacos....
that's all I can think of for now....

my house is in a big rut right now. we don't eat pork or beef, so lots of fish, chicken and turkey. there are some good ideas.

Super easy meal is to saute' sliced polska keilbasa (I can't spell it) with yellow onions and throw it over rice.:tongue

Fish probably doesn't sound too appealing to you right now, but Costo has really good pre-marinated wild salmon in individual servings.

My Dad used to make this a lot when we were kids...but he added sliced apples to the mix :)

I am all for stew. you can make it with out a crockpot, just easier. I Love tuna noodle. mmmmm Kevin hates it He wont eat hot tuna. haha I know some say its gross but boy I sure do love it.

Grilled cheese with baked fries that is yummy. I love making my own fries. I guess if you dont fry them they aren't called fries anymore.. haha Potato wedges?

stir fry any kind

chicken tacos
Spaghetti ( I make my own sauce in the crocpot )
anything on the grill
breakfast is always great we make it fun and do Mickey Pancakes
