I'm in search of a good, yet reliable ganache recipe. Do you use butter? Corn syrup? Just chocolate and cream? Do you even make chocolates? I don't know if I should use butter or not.... I'm looking to compare and find out others opinions....
What's yours?

When I've made it, I've just used choc and cream.

For making a really good ganache, you really only want use chocolate and heavy cream.

That is how I have always made it. My understanding is adding butter gives it a smoother and creamier texture. I have not tried this to test it yet....

The only true ganache I have ever made is for Jacques Pepin's Buche de Noel. That calls for some dark rum, too;)

Well, it looks like I'll just have to try it and see if it is better in a taste test...
